Recipe for cheesy mountain of Nachos – the easiest, tastiest party food

I almost didn’t share this recipe, as it’s hardly a recipe (though I imagine Nigella will create this soon).  However, you simply NEED to know how to create a nachos mountain, as it’s the most show stopping, mouth-watering snack you’ll ever create. It’s a party food that gets everyone talking (and asking for your ‘recipe’), and I’ve never known a time when guests haven’t polished it
up.
And the beauty of it all, it is easy as ABC. All you need is a grill and some ingredients.  The only thing I make myself is the guacamole (the recipe is here), and the rest is shop bought.
They often sell similar nachos mountains in restaurants, but this is by far the best I’ve tasted.
So here’s how to make my cheesy nachos mountain:
How to make nachos covered in cheese and sour cream - party food

Recipe for cheesy mountain of nachos with sour cream, guacamole and salsa

Ingredients:

1 bag of plain/salted nachos (flavoured nachos don’t work for this)
Two handfuls of grated cheddar cheese (or enough to cover the nachos)
3 tablespoons of guacamole (see my recipe for guacamole here)
3 tablespoons of salsa (shop bought)
3 tablespoons of sour cream (shop bought)
Half a diced onion (optional)
Some chopped jalapenos (optional)

Method (coughs):

Cover a baking tray with foil
Spread nachos onto the tray
Layer on the cheese
Sprinkle on the onions (optional)
Spoon on the guacamole, salsa and sour cream on different sides of the nachos
Place under a pre-heated grill for a few minutes until the cheese is melted, but be careful not to burn the nachos

Eat with abandon.Cheesy mountain of nachos – done!
